Sesame Ginger Salad in a Jar

Includes: zucchini, Crumbled Feta, mixed greens, marinated artichokes, sesame ginger vinergarette, whole kernel corn, baby spinach, red onion, tricolor quinoa, sugar plum tomatoes.

I've been eating lunch form a jar for 3 weeks now. I have a habit of skipping lunch, and even breakfast. One thing you learn when you begin to study nutrition, is that skipping meals is as bad over eating. It has the same end effect of putting on pounds. Planning my meals a week ahead had really helped me not to skip meals and the lbs are falling off. This particular one is a little higher in calories, than the others, but you can take out a little here n there if you'd like to reduce it.

INGREDIENTS:
[in this order, start at bottom]

1 cup mixed greens
1 cup baby spinach
1/8 cup crumbled feta
1/4 cup tricolor quinoa
1/2 serving whole kernel corn
1/8 cup chopped red onion
1/4 cup chopped zucchini
1/8 cup marinated artichokes
9 sugar plum tomatoes
2 tbsp sesame ginger vinaigrette

This will last about 5 days in the refrigerator. Be sure to buy all your ingredients fresh and that they use by dates are past the Friday of the week you plan to eat it by. Don't use old Feta from your fridge!

Practice great care when you add your dressing, artichokes, and feta. Those are the ingredients you want to cautiously pay attention to serving size and calories.
